Meatless Cheesy Nachos

Warning: These are delicious and you may eat the whole plate yourself. These are my take on traditional nachos that are even better with good company, football, and a cold beer. The black beans, kidney beans, and pickled jalapeños bring this plant based nacho recipe to the next level.

There aren’t many better days than the ones spent around a huge plate of nachos watching Sunday football. While this may not be a very well rounded meal (ahem, maybe a side of greens?), this vegan / vegetarian nacho recipe is quite satisfying and relatively guilt free with protein and fiber heavy black and kidney beans.

I personally love a little bit of spice – the pickled jalapeños and sriracha add just enough kick to the nachos to take them to the next level. These are super kid and Superbowl party friendly. Enjoy, enjoy, enjoy!

Meatless Cheesy Nachos

These are super yummy vegan, vegetarian, and gluten free friendly nachos – perfect for Sunday Football!

  • 1/2 bag of tortilla chips
  • 1 can kidney beans
  • 1 can black beans
  • 2 jalapeños pickled
  • 1 cup shredded cheese vegan or dairy, your choice
  • 1 can sliced olives
  • 1 tbsp sriracha


  • Spread out the tortilla chips on a large, microwaveable plate
  • Top with black beans, kidney beans, sliced jalapeños
  • Add shredded cheese and microwave for 2 minutes, or until melted
  • Next, add the sliced olives and sriracha. Enjoy with sour cream, green onions, guacamole etc.
