Roasted Garlic Fingerling Potatoes

This staple dish never makes it into the storage container for leftovers. It’s easy to make and is totally delicious for a weeknight dinner and a party of guests alike! Oven roasted and seasoned to perfection, these won’t last long.

Containing no cholesterol or saturated fat, fingerling potatoes are a very healthy choice for a side dish. Potatoes are high in potassium and Vitamin C and can be paired with nearly any entree. I chose fingerling potatoes, but feel free to use gold or red potatoes as well. My husband and I are always picking them right out of the casserole dish while they are cooling down. Enjoy!

Roasted Garlic Fingerling Potatoes

Ingredients
  

  • 3 lbs fingerling potatoes red, or gold are fine too
  • 2 tbsp olive oil
  • 2 tbsp minced garlic
  • 2 tsp salt
  • 2 tsp onion powder
  • 1 tsp parsley for garnish

Instructions
 

  • Preheat the oven to 425
  • Chop the potatoes into small cubes and add them to a large bowl. Mix in the olive oil, salt, garlic, and onion powder. Toss until covered and pour into a casserole dish or baking sheet
  • Roast the potatoes for 40 minutes, turning them after 20 minutes
  • Serve warm and garnish with parsley
