Sweet and Spicy Tofu Nuggets

Crunchy, healthy, savory. These are a great gluten-free and vegan alternative to deep fried chicken wings when you are having a hankering for some saucy goodness. Spoiler alert: these are oven baked and “breaded” with millet flour. The best part? Nobody would ever know that.

I have searched high and low for the perfect solution for the right healthy flour and cooking conditions to create tofu nuggets that actually taste crunchy and delicious. After several science experiments in the family kitchen, I am happy to report that I’ve found it! The best news is that its quick and easy, because we can’t have it any other way.

Millet flour fantastically nutritious compared to unbleached white flour. It is a gluten free whole grain that has lots of protein, amino acids, fiber, magnesium, phosphorous, and manganese! It’s also very easy to digest compared to many other grains. The tofu is a bean curd that has a great deal of protein, iron and calcium and is a fantastic substitute to meat.

The sauce is created with materials from around the kitchen and is healthy-ish. These are best if stored in the refrigerator for up to 4-5 days and can be eaten solo, over your favorite grain or salad, or in a taco!
