Sweet Potato Fries with Vegan Aioli

These highly addictive fries are oven baked and seasoned to perfection. There’s much to love about these fries; they’re healthy, nutritious, and extremely tasty, but you probably shouldn’t expect leftovers!

Sweet potato fries were the first dish that I learned how to bake when I moved out of my tiny New York city apartment in 2013. With only small modifications along the way, this tried and true recipe has stayed virtually the same. Seasoned with cinnamon, garlic, paprika salt and pepper, this is very easy to make and offers so much flavor. Naturally vegan, gluten free, soy, free and dairy free, this recipe should suit anybody’s dietary preferences.

When it comes to nutrition, sweet potatoes are definitely the healthiest of all of the potatoes. Not only are they a great source of fiber, both soluble and insoluble, but they also contain antioxidants which are critical to our health as they are cancer protective; they fight free radicals in the body. Additionally, they are very high in Vitamin C, Vitamin A, Copper, Manganese, Potassium, Vitamin B6, Pantothenic Acid and Niacin, which are all essential to our health.

Sweet potatoes are also high in beta carotene, which gives food its red, orange, or yellow color. It is an antioxidant that our bodies convert into Vitamin A (retinol). Beta carotene is very important for vision and promotes skin health, cognitive function, and lung health. It’s also found in carrots, squash, peppers, cantaloupes, and many other colorful vegetables and leafy greens.

Sweet Potato Fries with Vegan Aioli is simply delicious. Don’t need a dipping sauce? Omit the Vegan Aoili and eat the fries on their own! Either way, you will be thrilled.

 

 

Sweet Potato Fries with Vegan Aioli

Delicious roasted sweet potato fries with a vegan (dairy free) aioli dipping sauce

Ingredients
  

  • 4 large sweet potatoes
  • 1 tbsp olive oil extra virgin
  • 1 tsp ground cinnamon
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp maple syrup

Vegan Aioli

  • 3/4 cup vegan mayonnaise
  • 1 tbsp minced garlic
  • 1 tsp lemon juice
  • 1/2 tsp salt
  • 2 tsp sriracha ****optional, if you would like this to have some spice

Instructions
 

  • Heat the oven to 415
  • Rinse the sweet potatoes and, on a cutting board, chop off and discard the ends. Next, slice them longways into sticks 1/4 to 1/2 inch wide.
  • In a large bowl, mix the sweet potatoes with spices and stir in the olive oil.
  • On a baking sheet with parchment paper or a casserole dish, lay a single layer of fries down. You many need to use more than one dish.
  • Place in the oven and roast for 30 to 35 minutes, turning once halfway through.
  • While the sweet potatoes are cooking, mix together the mayonnaise, garlic, lemon juice, and sea salt. Optional: add in a dash of sriracha.
  • Once the sweet potatoes are cooked, remove from oven and serve warm with the vegan aioli dip.
